Sekaitaka was launched to commemorate the 200th anniversary of Koyama Honke. The steamed rice is prepared with a firm outer layer and a soft core, allowing for good separation and creating an ideal environment for microbial activity. Koyama Honke Brewery began its sake-making journey in 1808 after discovering a high-quality water source which is now the Nishi Ward, Saitama City, Saitama Prefecture. Since its founding, the brewery has cherished and preserved the sake brewing techniques it has developed, with a commitment to quality as its motto. Dedicated to meeting a wide range of customer preferences, it offers high-quality and delicious sake at affordable prices. The high-quality sakes are built on traditional skills passed down through generations of Toji (Master brewers), enhanced by the latest technologies while preserving the essence of handcraftsmanship. With forward-thinking investments in advanced facilities and carefully centralised production management, the brewery maintains uncompromising quality and consistently produces outstanding sake. The founder, Matabee Koyamaya mastered sake brewing techniques in Nada and Fushimi, discovered good-quality water springs in Shimogo, Sashiougi Village, Kita-adachi-gun, Musashi Province (present: Sashiougi, Nishi-ku, Saitama-shi) in 1808, and started brewing sake. Since the start of the business, Koyama Honke Syuzo has treasured the established sake brewing technology, met various needs of customers under the motto of “Quality First,” and made efforts to offer reliable, safe, delicious sake at reasonable prices.
